Buttermilk Blue Cheese Dressing.

So you heard me talk about making homemade butter and about the wonderful byproduct of the process, homemade buttermilk! Well the timing could not be more perfect for this lovely ingredient to come into my life. I am swimming in a sea of salad greens. We have enough salad to feed our entire neighborhood block for about a week. Needless to say, we are eating a lot of salads and it should be no surprise that we are getting sick of vinaigrette.

The result? Another item I can whip up at home that does not need to come via a brightly colored package chock full of preservatives and stabilizers. I can make what we need and will use in a week and be on my merry way. Buttermilk Blue Cheese Dressing! I will never buy store-bought again, this was amazing! It is thinner than your average supermarket dressing, but still hugs the greens nicely.

I strongly encourage you to adventure into the world of making sauces. It is just so rewarding and fun too.

3 oz blue cheese

1/4 C buttermilk

1/4 C sour cream

1 T white vinegar

1/4 t garlic powder

1/4 t pepper

1/4 t dried thyme, crushed

Combine all ingredients in a medium mixing bowl with a spoon adding blue cheese last once mixture is combined. Store in an air tight container in the refrigerator for about a week (if it lasts that long without being noshed).
